This seemed normal to me at the time: red at room temperature (if not warmer) and white chilled. No matter what the wine, this was and still is a common misconception of wine consumers today. Many red wines in restaurants, pubs and even at wine tasting events are served too warm. For me the main reason for chilling some reds is to moderate the harsh aroma of alcohol and to bring out the fruity and aromatic characteristics within the wine. It can also provide another level of re-freshment and enjoyment along with unlocking some new and exciting food and wine pairings. I'm not saying chuck it in the freezer for an hour or two: over chilling wine can have negative ef-fects, numbing the flavour almost completely (this also applies for whites). But lighter unoaked red, such as Pinot Noir, Cabernet Franc, Blaufrankisch, Corvina, Tempranillo are delicious at around 13 to 14C. Fifteen to twenty minutes in a fridge before consumption should be just fine. The great thing is if you do find the wine a little too chilled and not to your taste it will soon come to your pre-ferred temperature. Granted there are exceptions. Chilling red wine that's high in tannin can harshen this effect, making it seem bitter and astringent. Heavily oaky reds don't benefit from being too chilled either. Let your personal preference guide you and experiment with some of the recommendations bellow. Chilled Red and Food Pairing Suggestions Chilled Beaujolais (Morgon) - Dark chocolate ganache Providing the chocolate used is not too sweet, (around 70% coco) this is a great pairing. The bitter-ness of the chocolate is nicely offset by the subtle pepper, and the high acid stops the ganache from being to cloying. With Morgon being a fuller style of Beaujolais this carries the finish nicely, with bursts of strawberry. Chilled Shiraz and chocolate can also work a treat. Alsace Pinot Noir - Mozzarella and tomato salad This is a wonderful pairing. The wine has a fresh aromatic nose of strawberry and raspberry, with high enough acidity to balance with the tomatoes. The chilled wine carries the mozzarella and the freshness of the dish, making it the perfect lunch time treat. Chilled Valpolicella - Home cooked BBQ Cold white wine and a plate of poorly grilled meat just doesn't do it for me. Valpolicella with its vi-brant cherry and spicy pallet works nicely and holds up to those questionable burgers. The light body and soft texture makes it perfect for chilling. Chilled Chinon - Beef tartare A dish of raw beef needs a red with just a little tannin to break down the delicate protein. When I first started working in restaurants fifteen years ago, English wine was more of a punchline than a wine list staple. There may have been a few great producers back then, but without the quantity and a competitive price the word struggled to get out. However, in the last decade there has been a significant growth in vineyards and the number of producers. In the last decade alone there has been a 50% increase in hectarage under vine, which is expected to double by 2020. The production of English sparkling and still wine is considered small at around five million bottles annually. However, it is set to double in the next five years. To put the size of the English wine production into perspective, Möet & Chandon's Dom Pérignon exceeds five million bottles alone each year, which is miniscule in comparison to the 300 million bottles the Champagne region as a whole produces on top of that. The quality of English fizz has never been better. In the last 16 years, English sparkling wines have won nine trophies for Best International Sparkling Wine, and six trophies for Best Sparkling Rosé in global competitions. This has never been achieved by any other country. A lot of good restaurants are serving English fizz by the glass, as its natural high acidity and ripe fruit complexity make for the perfect aperitif. The light aromatic whites really come into their own when put up against tricky to pair foods such as English asparagus & artichokes. Our cuisine far outdates our history of quality wine production, so for a lot of classic British dishes - Roast Beef & Yorkshire Puddings, Steak and Ale Pie and so on - our wines don't quite hold up. Being a cool climate, trying get enough ripeness in red grapes to produce a suitable amount of tannin has proven to be tricky. However, we have great local dishes that go hand in hand with some of the best still and sparkling wines from some of the most passionate winemakers in the word. For anything that seems too heavy for our reds, or excessively rich for our whites, there is always a vast choice of local ales and lagers to please any palate. I have listed a few of my favourite food and wine pairings for you to experiment with during English wine month. Wye Valley asparagus with soft poached hen's egg - Bacchus Fume, Furleigh Estate This chlorophyll-driven green stick is a nightmare to pair wine with. Being very vegetal it can easily overpower and even alter the taste of many wines. Bacchus is an aromatic grape with fantastic ripe grapefruit on the palate that works in harmony with asparagus along with the barrel fermentation keeping it just rich enough to balance with the hen's egg. Warm beetroot & goat's cheese salad - Three Choirs Ravens Hill 2015 (served slightly chilled) This red is a blend of cool climate early ripening grapes that produce spiced fruit flavour which brings out the earthiness of the beetroot with high acid to cut through the goat's cheese. The chilled red is a great contrast with the warm beetroot especially if the dish is served with toasted nuts. Braised Beef Shin & mash with light rosemary jus - Gusbourne Estate Pinot Noir One of the best English still reds I have tasted, rich with raspberry and vanilla notes on the nose, with a just enough tannin to hold up to the tender braised beef, then spicy pepper with a rich round body carries the sauce with a refreshing palate cleansing finish. Beer battered fish & Chips - Most English sparkling wine There is nothing classier than a bag of fish and chips with a glass of bubbles. The natural high acidity in English sparkling wines cuts through the batter and the greasy chips wonderfully, and the fresh zesty notes balance the dish nicely. With the bubbles lifting the flavour of the delicate fish, this is a great combination and one we should be proud of. Eton mess with English strawberries - Nyetimber Demi-Sec NV This Demi sec has around 40g of residual sugar to balance with the sweet meringue. It has lovely lime and lemon zest on the nose, and refreshing acidity to battle all that creamy goodness. It's the most diverse and complex white grape with vibrant acidity and tantalising fruit. It is almost never masked by - and doesn't need - new oak. It's pure, ripe and not cloying or buttery. Don't get me wrong though - oak can be used to make some fantastic wines I'm not knocking it, but Riesling is a stand alone grape that best represents and reflects the land on which it's grown. The high fruit complexity along with the strong acidity makes it one of the best white grapes for aging, and aged Rieslings are some of the most sought after and delicious white wines in the world. Riesling comes in all styles from bone dry to sticky sweet, and there is guaranteed to be a Riesling for any palate and any occasion! Riesling might not only be the best white grape variety in the world, but it might also be the best grape to pair with food. When faced with a tricky dish to find that perfect match for, Riesling almost always seems to be able to solve the problem. Whether the dish has high acidity, richness, or strong aromatic elements, Riesling swoops in like a wine ninja to save the day. Rich dishes can be paired with an off-dry style to create a perfect balance with the subtle sweetness of the wine working in harmony with the richness of the food. Tough pickled fish or vegetable dishes work wonders with young ripe fruit driven Mosel styles with zesty acidity and long fresh finish. Foods with a lot of aromatic ingredients such as Thai and Indian cuisine can often mask the flavour of wine. But not an aged Alsatian Riesling. These Rieslings tend to have a richer feel on the palate, with strong vibrant fruit that can carry the flavour of the dish with neither wine nor dish being masked. As for the desserts, yep there is a Riesling for that too! Some Rieslings can have as much as 340g of sugar per litre (that's the equivalent of three cans of coke) Try a Beerenauslese, Trockenbeerenauslese or Eiswein style Riesling with a number of sweet desserts and find your perfect pairing. Below are just a few options I recommend. Remember, when pairing any wine with food there are no strict rules, experimenting is what food and wine pairings are all about, and if you like the pairing then it's a good one. So grab a glass of Riesling and bring on the sunshine! Dr Loosen 2015 Wehlener Sonnenuhr Riesling Spätlese - Foie Gras with fresh almonds and poached cherries Foie Gras tends to be very rich (and controversial). It needs a wine with enough sweetness to balance out that richness and the acidity must help refresh the palate as it can be rather cloying. Along with fresh lime and citrus zest this wine really brings the dish to life. Villa Wolf Dry Riesling - Grilled lemon cod with Mediterranean vegetables This crisp, food-friendly wine from the Rhine River valley is a great combination with light fish dishes. Green apple and lemon on the nose leading to a crisp palate with fresh acidity to carry the flaky fish and bring out the freshness of the vegetables. Hugel Riesling, Alsace - Thai Green curry Riesling and Asian cuisine are a quintessential pairing. The very light residual sugar in this Riesling balances out the sweet and spicy flavours, with ripe acidity and body to work with the creamy element of the dish while standing up to the strongly aromatic flavours. Dr Loosen Blue Slate Eiswein - White chocolate cheese cake with pecans and candied lime zest When pairing wine with dessert it's important to make sure both the sweetness of the pudding and the wine balance perfectly so they don't conflict with each other. This wine does just the trick with sweet creamy desserts. It's that time of the year where over indulgence is acceptable that extra glass of wine or two is encouraged, but with so many drink options and plenty of festive treats available what's the best tipple for you to enhance that much deserved Christmas joy? It's very important to start the day properly, bearing in mind that it's one of the few days of the year when pre-noon drinking is guilt free. Blue cheese and pork pie has always been my family's traditional Christmas breakfast. What better to accompany this than a nice glass of Port? The perfect excuse to crack open that older vintage that's been in your wine rack gathering dust for what feels like forever. Even a Crusted Port can go down fantastically. Port's intensity holds up to the strong blue cheese, and has plenty of sweetness to wake you up ready for the day ahead. Let's not forget the Mimosa - classically Champagne and fresh orange juice. I personally prefer to use a sparkling wine that is slightly lower in acidity than Champagne. The acidity from the orange juice balances the wine out perfectly. The best Mimosa I have had was a combination of Mexican sparkling wine and freshly made orange juice. And yes, Mexican sparkling wine is a thing! Alternatively, try Californian or Australian. If you're feeling extra adventurous try Orangecello (like limoncello but orange based). A 25ml measure toped up with any sparkling wine is a brekky revelation, and a super pairing for smoked salmon and cream cheese. It is however best to pace yourself this early in the day - with all the excitement you may not be able to squeeze in that much needed afternoon nap. The whole year has been building up for this moment: Roast turkey, stuffing, every variety of potato imaginable, pig wrapped up in more pig, honey roast parsnips, the green balls of sadness (aka Brussel sprouts), bread sauce, cranberry sauce. With such a huge flavour profile on the plate it's difficult to know where to start when pairing a wine or indeed any other beverage. Christmas dinner is time to bring out the big guns. No holding back, such rich food needs a wine with equal intensity. I try and avoid tannins with this meal; the high amount of salt on the plate can make highly tannic wines seem bitter or harsh. Save your heavy reds for Boxing day's cold beef and ham. Turkey and Burgundy are a super combination. A big buttery white or an aged robust red. Pommard is always a good option along with Nuits-saint-Georges. Aged Bordeaux with more refined tannin should also work a treat. Valdiguié is a grape verity for the adventurous. Grown in the south of France it creates light and approachable wines, however when its grown in a hotter climate (Napa California for example) it has a flavour that resembles cranberrys with a fuller body and no tannin. It's like a liquid cranberry sauce! The main obstacle with this feast is the Brussel sprouts; they can make almost any wine seem faulty on the palate with their sulphur and earthiness. This is how I deal with them. Cook them with pancetta and pistachios - chorizo also works a treat but isn't very traditional. Masking the flavour is the key! Or the most effective way is to not include them at all. Stick to peas, parsnips and carrots and all will be well. The traditional Christmas pudding soaked in brandy or sherry and then presented precariously on fire to the table. This deserves an aged PX sherry - the dried fig and prune work hand in hand with the dried fruit and sweet seasonal flavours. If the dessert is served with a cream or ice cream I tend to steer more toward a five or six puttonyos Tokaji - this wine packs a lot of acidity and with its autumnal aroma and rich palate of grilled fruit it balances wonderfully. Remember to save room for cheese and the rest of the breakfast Port! Then a strong coffee with a cognac or an Armagnac to wash it all down with. If all goes well you can make your way to the sofa to play charades and Pictionary behind closed eyes. Enjoy Christmas day and drink whatever means the most to you. A bottle of English fizz is becoming a very popular festive choice, for example. But most importantly don't forget to leave a good quality sherry out for the big man, Fino "en rama" I believe is his favourite bone dry tipple. What a fantastic deal, if not a little irresponsible. Many of the wines available happened to be Chilean, often Merlot and Sauvignon Blanc. As you can probably imagine, these wines were not of the greatest quality, but that most certainly wasn't my primary reason for buying them. As a result of deals like this, Chile is a wine producing country is that is associated with being cheap and cheerful. This has had the positive effect of helping Chile to get established as a major wine producing and exporting country. The problem, however, is that it has led to the preconception that you can't find top quality Chilean wine. When I started studying wine, this left a slight negativity in the back of my mind that all Chile produced was bulk everyday wine. I couldn't have been more wrong! The further I studied and tasted from this unique country, the more I realised it was a wine making haven. 4000 kilometres long and 300 wide, Chile is nestled between the four 'walls' of the Andes, the Atacama Desert, the South Pacific and the Antarctic. These geographic features not only add so much to the diversity of vines that Chile can grow, but also make it one of the few countries not to have been affected by the outbreak of the vine destroying louse Phylloxera of the late 1800s. Chile exports around 800 million litres of wine annually and almost half of this is transported in bulk, to be bottled at its destination. These wines are best drunk young and provide instant enjoyment for a reasonable price. These wines - although generally of a good quality - are not considered 'fine' and are not worthy of laying down to drink at a later date. Many wine producers create their house style wines at an affordable, entry level price, but also produce some more premium wines. This enables them to maintain a steady income as well as experiment with different winemaking and viticultural methods to create more complex high-end wine. Cono Sur, Errazuriz, Monte Alpha & the Garage Wine Co. are just a few names creating fantastic premium quality wine from exceptional fruit at affordable prices. Food and wine When choosing a Chilean wine to pair with food there really is no limit, I often struggle to think of a savoury dish that couldn't be paired with a delicious wine. You can get a big rich and round Cabernet Sauvignon to accompany sirloin steak, high altitude Shiraz to pair with lamb or even a Pais grape variety to pair with rustic bean stews and casseroles. The Sauvignon Blancs from the coastal regions are among some of my most favoured in the world. The cooling influences from the Humboldt current moderate the temperature maintaining fresh and zesty characteristics within the wines. They are lovely for summertime drinking or great with food - try them with oily fish such as mackerel or sardines. Chardonnays with a small amount of French oak work well with richer white meat dishes or heavier fish - try Turbot or Halibut.
