UBE Paganilla is 100% Palomino from two different plots, Grapes are hand-harvested early September and pressed whole-cluster into old 1,000-1,250L Jerez botas for spontaneous fermentation, where the wine completes aging for 8 months, 4 of which are in Manzanilla barrels some up to 100 years old.
